Grilled Aubergine Rolls with Tomato and Mozzarella

This grilled aubergine dish is the perfect summer lunch!

Ingredients

  • 2 large aubergines
  • 350g mozzarella
  • 2 tbsp. pitted black olives
  • 300g Mutti Classica sauce
  • Parmesan cheese
  • Extra virgin olive oil
  • Chives
  • Salt

Cooking Method

Cut the aubergines lengthwise into even, ½ cm thick slices.

Grill them on one side on a high heat and set aside.

Chop the mozzarella and dry using kitchen roll. Coarsely chop the olives and add them to the mozzarella. Add the Parmesan, a few spoonfuls of Mutti Classica sauce and a pinch of salt and pepper.

Lightly salt the aubergine slices, fill them with the mozzarella mixture and fold in half, creating a roll.

Arrange them, slightly overlapping, in an oiled casserole dish and cover with the remaining Mutti Classica sauce.

Add a drizzle of olive oil.

Bake for about 5-6 minutes at 180°C. Serve with chives, finely chopped into rings.
