Ingredients
- 3 tsp dried yeast
- 1 ¾ cups warm milk
- 2 tbsp caster sugar
- 3 ¼ cups Healtheries Gluten Free Bread Mix
- 2 tsp cinnamon
- 2 tsp mixed spice
- ½ tsp salt
- 60g butter
- 3/4 cup sultanas
- 3/4 cup Healtheries 99% Sugar Free Baking Bits
- 2 eggs
- 2 tbsp Healtheries Gluten Free Bread Mix
- 1 tsp sugar
- 1 tbsp apricot jam, warmed to glaze
Cooking Method
Place yeast, milk and sugar in a small mixing bowl. Whisk to dissolve the sugar and rest for 10 minutes.
Sift together the first measure of bread mix, spices and salt into a large bowl of an electric mixer. Using fingertips, rub through the butter.
Add sultanas, Healtheries 99% Sugar Free Baking Bits, eggs and the yeast mixture. Mix using dough hooks for 7 minutes.
Divide mixture into 12 generous mounds and place on a greased baking tray. Allow plenty of space between each for the dough to rise.
Rest the dough in a warm place for 45 minutes until almost doubled in size. Preheat oven to 180°C fan forced.
Mix the second lot of bread mix, sugar and 1 Tbsp of water into a paste and pipe crosses on the buns.
