Not aware if there is a gluten free soy sauce. The colour is light compared to other brands, and tasts less salty – I wasn’t sure if it would work, but still used the soy sauce as the marinate base for chicken thigh fillets. It turned out to be amazing – final dish the baked soy sauce chicken thigh fillet had the right colour and right saltiness.
